Why this bottle matters

A Cordant bottle from Bien Nacido, not a borrowed vineyard name

Bien Nacido is one of the vineyard designations that changes how a California Chardonnay is read. Cordant is David and DeAnn Taylor's Central Coast house, and 2022 was Scott Stelzle's first vintage there after more than twenty years in Paso Robles. He drove the coast that hot harvest to keep each source honest. This bottling is their Bien Nacido Chardonnay: Santa Maria fog, cool afternoon wind, sandy and chalky soils, orchard fruit with citrus lift. It is Cordant's wine from that site, not another producer's lookalike poured under a famous vineyard.

1

The house

David and DeAnn Taylor founded Cordant in 2014 to bottle Pinot, Chardonnay, and Rhone varieties from premium Central Coast sites. Scott Stelzle took the 2022 harvest.

2

The wine

100% Chardonnay from Bien Nacido in Santa Maria Valley. 13.9% ABV. Restraint-led oak, site-first texture.

3

The site

Pacific fog, cool afternoon breezes, and a canyon vineyard that has defined Santa Maria Chardonnay for decades.

4

The drinker

Orchard fruit and citrus first. Serve 50 to 54 F. Roasted salmon with horseradish cream or cider-cream salmon.

Tasting Profile

Orchard fruit and citrus, then mineral, not butter

Cordant frames this 2022 as orchard-fruit generosity with citrus lift and freshness without heaviness. Subtle toast stays in support. The finish leans on balance and Santa Maria clarity rather than a heavy oak signature.

Bien Nacido vineyard country
Bien Nacido Vineyard in the Santa Maria Valley
The Vintage2022 on the Central Coast

A hot, compressed harvest. Stelzle traveled the coast to pick for place rather than a single recipe. Bien Nacido's fog and wind kept this Chardonnay in the orchard-and-citrus register.

Fruit + Aroma

Orchard fruit, citrus, honeyed lime, dried herbs, a mineral snap.

Texture + Structure

Medium, 13.9% ABV, integrated oak, Santa Maria acidity, no heavy butter line.

Finish + Service

Fresh, mineral, quietly toasty. Serve 50 to 54 F.

Oenology / Winemaking

Bien Nacido fruit, then a light hand in the cellar

Cordant positions this wine around Bien Nacido Vineyard fruit, where Pacific fog and cool afternoon breezes preserve freshness while long ripening builds flavor. Stelzle's stated Cordant method is as natural as possible: no needless alterations, native yeast when it works, and vineyard truth ahead of a house recipe. That is why orchard fruit and citrus stay in front of toast.

Bien Nacido Chardonnay clusters
Chardonnay clusters in the Santa Maria Valley

Santa Maria Valley's transverse range funnels ocean air into the canyon. Bien Nacido's sandy and chalky soils add the mineral edge that keeps the 13.9 percent alcohol from reading as weight.

Serve 50 to 54 F. A few minutes in the glass is enough. This is a food Chardonnay, not a cocktail oak bomb.

History / Estate

A Paso house, a Santa Maria vineyard

Cordant is a family project from Paso Robles. Bien Nacido is the Santa Maria site they chose for this Chardonnay.

Bien Nacido vineyard history
Bien Nacido Vineyard historical portrait

David and DeAnn Taylor founded Cordant in 2014 to bottle Pinot Noir, Chardonnay, and Rhone varieties from vineyards stretching the Central Coast, including Bien Nacido, Santa Rita Hills, and the Santa Lucia Highlands.

In 2022 they brought on Scott Stelzle, a twenty-year Paso winemaker, to take the harvest. His first Cordant vintage is this bottle.

Bien Nacido itself is the Miller family's Rancho Tepusquet canyon, one of the vineyard names California Chardonnay collectors already know. Cordant is the producer on this label. The site is the argument.

Gastronomy / Food Pairing

Salmon, horseradish, and a cider-cream pan

Orchard fruit and mineral Chardonnay want rich fish and a little heat. Horseradish cream and cider cream both give the wine fat to cut and citrus to echo.

At The Table • Pairing In Action

Two plates. One roasted salmon with beets, potatoes, and horseradish cream. One pan-seared salmon with cider cream. Both can take Bien Nacido acidity.

Serve + Decant

Serve 50 to 54 F. No hard decant.

Pairing Recipe
Roasted salmon with beets, potatoes, and horseradish cream

Roasted Salmon, Beets, and Potatoes with Horseradish Cream

Roast salmon, earthy beets, and a horseradish cream. Enough richness for Santa Maria Chardonnay.

Why it works: Horseradish lifts citrus and herb. Beet earth echoes the mineral line. Salmon fat meets the quiet oak.

Pairing Recipe
Pan-seared salmon with cider cream sauce

Salmon with New Potatoes, Spinach, and Cider Cream

A cider-cream pan sauce, greens, and salmon. The weeknight Cordant plate.

Why it works: Cider cream mirrors orchard fruit. Spinach keeps the finish from going heavy.
