Why this bottle matters

Five vineyards, all within about two miles

Hedges Family Estate from the air

The 2022 is 60 percent Cabernet Sauvignon, 29 percent Merlot, 5 percent Syrah, 3 percent Cabernet Franc, and 3 percent Malbec. The vineyard split is 35 percent Bel Villa, 31 percent Hedges, 19 percent Jolet, 10 percent Magdalena, and 5 percent Les Gosses. Sarah Goedhart is the winemaker.

New oak is 49 percent, and that oak is 58 percent American, 39 percent French, and 3 percent Hungarian. Alcohol is 14 percent, pH is 3.90, and the wine was bottled on May 1, 2023. If the people who got this mountain recognized grew the fruit within about two miles, why pour a red with less of it in the glass?

Jeb Dunnuck scored the 2022 a 91, and the wine holds a Sommeliers Choice gold.

The year was Red Mountain from the start: snow in April, heat over 100 in mid-August, and the fruit in before Thanksgiving. It is best with food now, and the peak runs over the next 5 to 10 years.

Gastronomy / Food Pairing

Coffee-rubbed chops, then grilled peaches

Cocoa, rosemary, and baking spice want a coffee rub on pork, and the fig and toffee want a grilled peach.

At The Table • Pairing In Action

Two plates. Coffee-rubbed pork chops. Grilled peaches. Both can take fig, cocoa, and rosemary.

Serve + Decant

Give this Cabernet blend a short decant, then pour it with the chops.

Pairing Recipe

Coffee-rubbed pork chops

Pork chops coated in coffee, brown sugar, paprika, and warm spice, then grilled.

Why it works: The coffee crust meets cocoa and baking spice, and the pork fat softens the tannin.

Pairing Recipe

Grilled peaches

Halved peaches brushed with butter, grilled cut side down, then finished with cinnamon sugar.

Why it works: Charred peach lines up with fig, toffee, and vanilla without covering the red fruit.
