Dave Phinney, Napa Cabernet
2023 Orin Swift Mercury Head Cabernet Sauvignon, Napa Valley, USA
The Mercury Head dime Dave Phinney kept as a kid is the picture on his flagship Napa Cabernet.
Orin Swift calls this the flagship. The 2023 is Cabernet Sauvignon and nothing else, and Wine Advocate set it at the top of the lineup. The bottle is $150.
Four vineyards, one Cabernet, a long cool year

The 2023 is Cabernet Sauvignon from Napa Valley, drawn from Stagecoach, Morisoli, Indian Joe, and Warnock. A long, cool season let the fruit hang, and the winery says this one is to hold for decades.
It spent 13 months in French oak, 52 percent new, at 15.5 percent alcohol. If the fruit already comes from those four vineyards, what is the case for leaving the 2023 on the shelf?
Wine Advocate
At the top of the Orin Swift lineup. Plush and generous, with velvet unrolling on a long finish.
James Suckling
Super-concentrated, trim, and age-worthy, with graphite, cocoa, black olive, and tobacco leaf.
Owen Bargreen
Velvety and silky, with concentration, elegance, and depth.
Wine Enthusiast
Bold, generous, and hearty, with layers and a palate-cleansing structure.
Cherries, cassis, graphite, and tobacco leaf

Wine Advocate scored the 2023 a 96 and pointed to Morisoli and Stagecoach as the core of the blend. Cedar and vanilla sit with cherries, raspberries, and cassis.
James Suckling's 96 tastes of black cherry on an elegant texture, then graphite, cocoa, black olive, and tobacco leaf. Owen Bargreen's 95 is inky, with cassis, wintergreen, and black cherry compote. Wine Enthusiast's 94 moves from black currants, plum skin, and fig into chocolate, tobacco, and graphite, and the acidity clears the finish.
Neon crimson at the rim

The core is opaque and dark, and the rim flashes neon crimson. Blackcurrant, Amarena cherry, and California chaparral come first, with a light kiss of oak.
Blue fruit, blood orange, dark chocolate, and rhubarb fill the palate. The tannins are fully in, and the close is blackberry preserves and licorice. Add it at $150. Twelve bottles ship free in the lower 48. Hawaii and Alaska are quoted on their own.
Blackcurrant, Amarena cherry, chaparral, and oak.
Blue fruit, blood orange, dark chocolate, and rhubarb.
Blackberry preserves and licorice.
Cabernet, and only Cabernet
The 2023 Mercury Head is a single varietal from Napa Valley.

It spent 13 months in French oak, 52 percent of it new. Alcohol is 15.5 percent.
Stagecoach, Morisoli, Indian Joe, and Warnock are the vineyards the winery names for this vintage.
A childhood dime, and a room on Main Street
Dave Phinney put his favorite coin on the bottle.

The Liberty dime, the one with the Mercury head, was the coin he prized as a kid. That picture is the label.
Orin Swift pours on Main Street in St. Helena. Wine Spectator put him on the cover, from wine to whiskey to Mare Island.
Grilled lamb chops and a bowl of ratatouille
Charred lamb meets blackcurrant and cherry. Ratatouille's herbs sit next to the chaparral.
Grilled lamb chops for the Cabernet, and ratatouille on the same table.
Thirteen months in French oak supports a brief decant, then a short rest in the glass.
Grilled lamb chops
Serious Eats salts thick rib or loin chops, starts them on the cool side of the grill, and finishes them over the hot side.
Why it works: Char and lamb fat meet blackcurrant, Amarena cherry, and the dark chocolate note.

Provencal ratatouille
Daniel Gritzer cooks eggplant, summer squash, peppers, onion, and tomato, then brings them together in a thick tomato sauce.
Why it works: The herbs and the softened vegetables echo the chaparral and keep the oak from sitting alone.
