Salmon with the skin on, farro with mushrooms
Crispy salmon skin and roasted mushrooms give this Anderson Valley Pinot a dinner.
Two plates. Crispy-skin salmon first, then farro with roasted mushrooms. Both can sit with a cool Pinot.
Serve it at a cool cellar temperature.
Crispy-skin salmon
Skin-on fillets cook skin side down until the skin is crisp, then the flesh side gets a short finish.
Why it works: Crispy salmon skin gives the Pinot a hot crust to cut, without a heavy sauce in the way.

Farro with roasted shiitake and oyster mushrooms, lemon, and olive oil.
Why it works: Roasted mushrooms are the second plate, earthy enough for Pinot that spent ten months in French oak.
